Subject: Lobsterman Bisque
 
1/4 cup butter
1/4 cup flour
1tsp salt
1/8 tsp black pepper
5 cups chicken broth
juice from 1 lobster
1/2 cup minced shallots
1 bay leaf
10-12 oz lobster meat (two tails or 1 whole large)
2 egg yolks
1 cup cream
1 tsp red pepper
2 tbs tomato sauce
 
Make roux the color of peanut butter with flour and butter. Add salt &
black and red pepper. Gradually add chicken broth and any juices that
come out of the lobster after its boiled and you are picking it. Add
shallot and bay leaf. Simmer covered on low heat for 20 minutes. Add
minced lobster meat and simmer 10 minutes. Beat egg yolks, temper with
small amounts of broth and add to pot. Simmer 5 minutes stirring
constantly - DO NOT BOIL - Gradually add cream then enough tomato sauce
to give it a slight pink color.  


Subject: Gotta Let this Hen out Coconut soup

5 cups thin cocnut milk (the watery part in the can, not the thick - so
don't shake the can)
1 large hen chopped - on bone is an option
3 stalks lemon grass in 1/2 inch pieces
2 tbs loas powder or 4 tbs fresh grated ginger
3 chopped green onions
3 tbs chopped corriander
6 peppers chopped - jalapeno heat level or higher depending on how bad
you want the hen out
3 tbs fish sauce
juice of 2 lemons
 
Bring milk to boil. Add hen, lemon grass and loas powder (if using ginger
wait). Simmer 15 to 20 minutes (til chicken is done). Add onions,
peppers, corriander and ginger if using. Heat to just below a boil Remove
from heat and add fish sauce and lime juice.


Subject: Chickpeas and Strips of Skin

2 oz of thick cut bacon in 1 inch cubes
1 oz prosciutto in 1 inch strips
2 chopped onions
1 tomato peeled, seeded and chopped
2 cloves garlic
4 cups cooked chickpeas
1 cup of Mussolina d' All *
 
Fry bacon and proscuitto in a small amount of olive oil until lightly
brown. Remove from pan and drain on towels. Pour off enough fat from pan
to just cover it. Add the onions, tomato, and garlic and cook until they
make a mush. Add the meat and chickpeas. Cook on low heat until warm
through. Add salt and pepper to taste then flatten pea mixute with
spatula into a giant patty. Pour Mussolina on top. Stick under broiler
for a couple of minutes until it starts to puff up.
 
*Mussolina d'All
12 cloves of garlic
1/2 tsp salt
2 egg yolks
1 cup olive oil
 
Roast garlic in 350 degree oven for 1/2 hour. Let it cool then squeeze
the cloves into a bowl. Mash into a paste. Add egg yolks and slowly beat
in oil until it emulsifies (making mayo).


Finally, this parting thought:
 The human brain can only operate as fast as the slowest brain cells. 
Excessive intake of alcohol, we all know, kills brain cells, but
naturally it attacks the slowest and weakest brain cells first.
 
In this way, regular consumption of beer eliminates the weaker brain 
cells, making the brain a faster and more efficient machine.
